What is the AIB?

AIB Stands for The American Institute of Baking. The AIB is a certification agency for the food industry. This certification process is a very detailed comprehensive inspection in food safety. The criterion for this inspection is a combination of Good Management Principles, The Federal Food and Drug Cosmetic Act, Good Manufacturing Practices, U.S. Military Standards and the Federal Insecticide, Fungicide and Rodenticide Act.

AIB was used for the baking industry because of the difficulty of food safety and sanitation. The standards for certification have been applied to all areas of the food industry because it is so comprehensive.
